So to turn it around, if you attempted to eat nothing but lettuce and drink nothing but water, well, you'd die. Dying is unhealthy, is it not? At 77 calories per lb, you're not going to reasonably be able to eat enough to keep alive to a normal lifespan. Sure, you could probably get 5lbs of the stuff down in a day, but you would lose weight, lose your fatty energy stores, your body would consume its muscle, and you'd die of malnutrition.
See how absurd the question is? Eat a balanced diet, and it's healthy. Eat an unbalanced diet, and it isn't healthy. The less balanced your diet is, the less healthy it is. Your diet should be a bit low in calories if you're overweight, and a bit high in calories if you're underweight. It should contain different foods that provide different nutrients. Plenty of people live long lives eating different types of food.
